This year we smoked 2 turkey's and 2 pork roasts, totalling 47lbs. of meat at one time, On the turkeys we tried a new thing for us we placed them on a pan to catch the juices so we can baste after.The pork roasts we just put on the rack and rubbed them using our fig family dry rub recipe mmmmm.... Meat was on the smoker for a total of 10 hours - 7hrs at 200 degrees and 3 hours at 300 degrees. we used hickory, chickory and mesquite for the wood We have a great outdoors gas smoker
